According to the regulation of the European Union, olive oil is separated into the following main categories:

Virgin Olive Oil:

  • Drinkable Olive Oil:
  1. Extra Virgin Olive Oil: is the olive oil with unspoiled taste and odor with acidity <0.8%.
  2. Virgin Olive Oil: is the olive oil which is collected from olive 's fruit with natural or technical means. During its collection, environmental conditions do not cause vitiation of its qualitative characteristics. Its acidity is <2.0%.
  • Olive Oil improper for consumption

Refined Olive Oil: is the olive oil which is collected from virgin olive oil with refinement and it does not cause changes to glyceride 's original structure.

Olive Oil: this oil consists of mix both of virgin olive oil and refined olive oil.
